A little savory for the sweet

I always remind my kids to eat the rainbow, but this time of year I need that reminder myself. We've got cookies to spare, but we still have to eat dinner. (Don't we?)


New on the blog this week is a Greek Goddess Salad. In classic Greek salad style, it's full of color and texture, but this time topped with herby Green Goddess Dressing. Add on crispy roasted chickpeas, and it's filling enough for dinner.

If you haven't tried this Moroccan Lentil Soup yet, put it on your list. I made a big batch on Sunday two weeks in a row and had it for lunch most days. It's warming, filling, and the sweet potatoes give it a hint of sweetness. Top it with yogurt, serve with warm pita bread.

Finally if you want all the flavor of takeout without the cost, Instant Pot Chickpea Curry is here for it. It uses the pot-in-pot method to cook Basmati rice at the same time, so it is the definition of a one pot meal.

We haven't had any snow yet, but it's plenty festive in our house. And June is so excited about the holidays that there's no chance of getting her to sit still for a photo.
